These are the best chocolate chip cookies I’ve ever made
or had. I came across this recipe a couple of years ago when I was looking for
easy cookie recipe to make with my daughter during long winter break (Oh, how I
dread those! - Considering the NW weather.) I tried these out and then did some
modifications and now it’s the go-to recipe for me.
Recipe makes 3 ½ dozen cookies
Prep time - 15 minutes
Baking time - 12 minutes
Ingredients -
1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs OR Ener-G egg replacer for 2 eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semi-sweet chocolate chips
Directions-
Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, brown sugar,
and white sugar until smooth. Beat in the egg replacer (or eggs), then stir in
vanilla.
Combine the flour, baking soda, and salt; stir into the
creamed mixture until just blended.
Mix in the quick oats, walnuts, and chocolate chips. Drop
by heaping spoonful onto ungreased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies
to cool on baking sheet for 5 minutes before transferring to a wire rack to
cool completely.
Note - As a healthy alternative, you can use 1/2 cup butter and 1/2 cup applesauce.
